That’s the thinking behind FORM–our new cafe in the heart of Brisbane’s CBD, where nourishing food is the default, not the exception. I still find myself out and about thinking, why is it so hard to find food as clean as what I’d make at home? FORM had to exist–a cafe that meets your standards, even when your schedule doesn’t.
I wasn’t always obsessed with whole foods and functional fuel. A near heart attack and a diagnosis of unstable angina changed that–fast.
“If you hadn’t made those changes to your life and diet 12 months ago, you’d be dead.”
Those were my cardiologist’s words. It was the kind of wake-up call that doesn’t just change how you eat–it changes how you live.
FORM was born from that transformation. I wanted to build a cafe that delivered the kind of food I’d cook at home on my best day–but even more satisfying. Food with integrity. No ultra-processed junk. No sneaky refined sugars. No seed oils. Just real ingredients that do what food should: nourish your body, supercharge your mind, and make your tastebuds high-five each other.
To make it happen, I teamed up with Head Chef and in-house Nutritionist Dylan Brace. Together we’ve crafted a menu that doesn’t force you to choose between flavour and function. Whether you’re in for a five-minute grab-and-go or a mindful morning or midday recharge, there’s something here that’ll hit the spot and leave you better for it.
Take the maple and macadamia granola with blue yoghurt and seasonal fruit salsa. Or the bacon and egg roll on an organic olive oil bun with chilli jam and rocket. They taste like a treat, but your body knows better.
Our “FORM your own” bowl concept has become the cult favourite. Mix and match seasonal salads–think roast cauliflower with tahini maple or minty soba noodles–and add your protein of choice, like slow-cooked lamb shoulder or our ginger beef balls. Finish with gut-boosting toppings like fermented chilli yoghurt or miso-marinated egg, and just like that: you’ve built your best meal of the week.
And yes, there’s coffee–really good coffee, from Brisbane’s best roasters. Or try one of our functional sips like the Golden Nourish smoothie or a calming, ceremony-grade matcha.
